Uni 4 Ways with Jen Phanomrat


Thumbs up if you're a fan of uni! RECIPES Uni Sushi: 1 roasted nori sheet, sliced into strips 1 ½ cups cooked & seasoned sushi rice 4 oz fresh uni 2 tbsp seasoned salmon roe Water for hands Soy sauce for dipping Wet hands with water and shape a small ball of rice into an oval. Wrap with a strip of nori leaving space on top. Place some salmon roe on top of the rice on one side and uni on the other. Serve with soy sauce. Scallop & Uni Ceviche: ¼ lb sea scallops, sliced into halves 3 oz fresh uni ¼ cup freshly squeezed lime juice 2 tbsp freshly squeezed grapefruit juice ⅛ cup red onion, thinly sliced 1 tbsp fresh cilantro, chopped 1 garlic clove, minced Red chili to taste, thinly sliced Kosher salt to taste Combine lime juice, grapefruit juice, onion, garlic, chili, and salt. Gently mix in halved scallops and cilantro. Serve with uni on top. Uni Pasta: 8 oz spaghetti 1 egg 4 tbsp melted butter 4-6 oz fresh uni Kosher salt to taste Grated parmesan to taste Shredded nori In a bowl, combine egg, butter, and uni. Cook pasta in salted water according to package instructions. Save about ½ cup of pasta water, drain pasta, and return to pot. With the heat off, gradually pour the mixture over the pasta and toss well. Add some of the pasta water and toss until combined. Serve immediately with parmesan, nori, and uni on top. Uni Risotto: ¼ lb pancetta, diced 4-6 oz fresh uni 2 tbsp shallots, minced ¾ cup arborio rice ¾ cup sake 3 ½ cups chicken broth 3 tbsp softened butter Furikake to taste Using a fork, combine butter and uni and set aside. Heat a small pot of chicken broth on the side on low heat. In a pan, brown pancetta until crispy. Remove with a slotted spoon and set aside. On medium heat, add shallots to and saute in the pancetta fat until translucent. Stir in rice and toast for a few minutes. Lower the heat and pour sake and stir until the rice has mostly absorbed the liquid. Add a ladle of broth and stir occasionally until the liquid is absorbed. Continue the process until all the broth is absorbed and the rice is cooked to your liking. Turn off heat and stir in pancetta and uni butter. There are many ways to open a sea urchin. You can pry it open with two spoons. You can cut it open with scissors. You can crack it open with a knife. You can use this really cool sea urchin tool from Japan ($80). In this video, I will show you how to open and clean out sea urchin using a pair of kitchen scissors. I will also show you how to convert the shell into a pretty sea urchin plate. Lastly, I will introduce you to two yummy sauces that pairs well with the uni. Suggestions: 1. Wear gloves if you don't want to stain your hands. 2. Use an aluminum pan or plastic cutting board while handling sea urchin. How to open and prepare LIVE Sea Urchin Uni


Opening live sea urchin and preparing sea urchin uni sushi or sashimi may seem like a daunting task, but this video will show you how quick and simple it is with the right tools. The equipment: 1. Gloves. Ideally, cut resistant gloves should be worn when handling the sea urchin, as they are covered in sharp spikes that can cause injury if you are not careful. 2. A bowl of ice water. This is where the uni is placed after it is scooped out of the sea urchin shell. 3. A pair of spoons. The sea urchin shell can be easily cracked open with two spoons. They can also be opened with kitchen shears, which may provide better control for some people. 4. A large wooden cutting board. This is what you will place the sea urchin on while you operate on it. It may be more clean if you use a large bowl, but I used a cutting board so that you get a better view of the sea urchin as I work on it. One step that people often do that is not done in this video is to cut around and remove the "mouth" of the sea urchin before using the spoons to crack it open. I usually skip this step to save time, as I find that it doesn't make opening the sea urchin any easier. Please like and comment if you find this video useful! Considered a delicacy in several parts of the world, sea urchin, or uni in Japanese, is prized for its unique flavor. But the cost of the gonads — the orange tongues found inside an urchin — is steep. Just one 200-gram box of premium gonads can cost $100. In Japan, some sea urchins can sell for five times that. Sea urchins are one of the few seafoods still hand-harvested by divers today. In recent years, masses of them have taken over the seabeds of California. So why are there so many urchins? And how, despite this seemingly huge supply, are they still so expensive? Easiest way to crack open a spiky sea urchin for the uni!


Rinse the shell of the sea urchin and take out the beak (or the mouth) by inserting a sharp pair of scissors, grab, twist, and pull it out. This creates the opening for you to insert 2 spoons with the tips of the back against each other like this. Squeeze the top of the handles and it will crack the uni in half. Dump out the insides that is filled with digested kelp and pick out the leftover kelp that is stuck on gonads. Rinse it until the water comes out clear. You can use your spoon to pick out the gonads or if they're loose, scoop ithem out with your hands gently. Wash off the uni and soak it in salt water for a few minutes. Sea urchin AKA uni is a delicacy. Whenever I see at the market, I don't care how much it cost I got to buy it. It is usually eaten raw, but how about making into a sauce and serve with pasta. This dish is creamy and so scrumptious. You can use spaghetti, angel hair or any type of pasta you like. Here are the ingredients you will need... Otaru is a small port town on the island of Hokkaido in Japan, that’s known for its abundance of delicious and fresh seafood. So during my trip to Sapporo, I knew it was one day trip we didn’t want to miss. Sapporo Station - To get to Otaru from Sapporo, you can take the JR train from Sapporo Station. It cost me 640 JPY ($5.73) and the ride took about 45 minutes or so. Sankaku Market Seafood Market - Just outside the Otaru train station and to the left hand side as you exit, you’ll find Sankaku Market, a small and very friendly fresh seafood market selling an abundance of Hokkaido seafood delicacies like uni (sea urchin). There are some very famous seafood rice bowl restaurants, but you’ll also find different fish, and fresh King crabs and hairy crabs. I took one walk through the seafood market, but then settled on the first shop - mainly because they owners were so friendly and welcoming. Kawashima Shop - This the the seafood shop at the market we ate lunch at, and I would highly recommend it. The owners and staff were all very friendly, and the seafood was fresh and incredible. Hakkaku (sailfin poacher fish) - 1,000 JPY ($8.96) - Along with uni, one of the things I wanted to eat in Otaru was Hakkaku, which is a sailfin poacher fish. It’s look very unique, and it prepared as sashimi. It was delicious. Uni don (sea urchin bowl) - 4,500 JPY ($40.31) - But the real dish I came all the way to Otaru to eat was a full uni don, sea urchin rice bowl. First a layer of rice went down, then a couple of shiso leaves, then a full bed, and entire box of fresh vibrantly yellow sea urchin (uni). It was outstanding. I’ve had sea urchin many times before, but usually it’s just a couple pieces of sushi, this was an entire bowl full, and it was insanely delicious. Hairy crab (horsehair crab) - 6,500 JPY ($58.23) - Finally, just because I had never had a hairy or horsehair crab, I decided to get a fresh crab. Horsehair crabs are all about the roe inside, and it’s complex and flavorful. This was an amazing day of Japanese food in Otaru, the highlight for me was the seafood market, and it’s well worth a visit when you are in Hokkaido. You’ve never had BBQ oysters like this before, topped with creamy, rich uni butter. Brandon Boudet, Chef and Owner of Little Dom's & Little Dom's Seafood in California, shows us that oysters aren't so scary to have at home! Brandon shares his tips for opening sea urchins and shucking oysters like a pro, as he barbecues some fresh-caught local giga oysters, then tops them with a compound butter made with uni! (Recipe below) Barbecued Oysters with Smoky Uni Butter: 🤍 For the Uni Butter: 1/2 cup (1 stick) unsalted butter, softened 2 ounces uni gonads Grated zest and juice of 1/4 lemon 1 teaspoon finely chopped fresh oregano 1 teaspoon red-pepper flakes 1 teaspoon smoked paprika 1 small garlic clove, finely grated 1/4 teaspoon kosher salt 12 oysters, shucked, top shells discarded Lemon wedges, for serving 1.Heat the broiler on high. Combine butter, uni, lemon zest and juice, oregano, red-pepper flakes, smoked paprika, garlic, and salt in a medium bowl. Using an electric mixer, beat the butter mixture until well combined. Set aside. 2.Spread rock salt on a rimmed baking sheet. Carefully nestle opened oysters in salt so they remain upright. Top each oyster with 1 tablespoon uni butter; broil until butter melts and browns on edges, 3 to 5 minutes. Serve immediately with lemon wedges.
